The market
The fresh produce market remains one of the major markets in Europe. It includes fresh fruit and vegetables; prepared salads, vegetable and dips; semi-processed fruits and vegetables. Consumption is fairly static, except for the prepared salad market which is growing at an average of 12% per year. Market growth has been encouraged by changing eating habits, such as snacking, year-round product availability, and a growing trend towards vegetarianism and healthy eating. Retailing of fresh produce as packaged and convenience foods has enabled flexible packaging to penetrate this market to a far greater extent than elsewhere. Key factors driving the market are value-added products and packaging presentation, including packaging strength and clarity. The main market players are changing their production-led operations to those that are genuinely market-driven.

The 4th market range uses new technologies to bring consumers value-added, ready-to-eat products that offer quality and security. These normally have a limited shelf life of between 5 and 13 days, depending on the product. The production characteristics of freshly-cut items include modified and controlled atmospheres, low temperature pasteurisation and intermediate moisture. The emphasis is on freshness, so cold chain treatment is essential at each stage of a product's production and distribution. Main factors of degradation
No treatment can be relied on to substantially reduce the number of contaminating micro-organisms. To decrease the risk of multiplication, products are often washed with anti-microbial compounds (bleach). In some cases, MAP (modified atmosphere packaging) is used (gas flushing with N2 or CO2 injection).
