Packaging: Confectionery - Chocolate


Listed below are some of our films that have been used in typical packaging applications in different markets. Every application is different and the use of any packaging product should be rigorously tested before being used commercially. (See guidelines.)

The market

The confectionery market is the third largest market segment in Western Europe to use polypropylene film and one of the most creative and diversified ones. Many confectionery products, particularly in the count line sector, are bought on impulse, for or by children. Purchases are spread evenly throughout the year. Over the last five years, the market has predominantly been influenced by social and lifestyle changes such as the move towards more healthy eating and health products.
The two market segments, chocolate and sugar confectionery, account for 70% and 30% of sales volume respectively. Each market segment has specific packaging requirements. For many years ExxonMobil's active innovation process has resulted in the development of packaging films that offer effective solutions for confectionery. These films include transparent, white, metallised and special coated films, as well as twist wrapping.

Product characteristics

Chocolate is a high-energy foodstuff with a complex nutritional profile (lipids, carbohydrates, proteins, mineral salts and vitamins - riboflavin, vitamin A & E)

Causes of deterioration in quality

When stored under correct conditions of temperature and humidity, chocolate is a very stable product due to its low moisture (1-1.9%) and high fat content (28-35% including 1.4-1.6% polyunsaturated fatty acids). The presence of vitamin E in cocoa provides a high degree of protection against oxidative rancidity.
Nevertheless, when proper storage procedures are not followed, severe degradation may occur. This includes fat bloom, sugar bloom, rancidity and loss of texture.

Temperature
High and fluctuating temperatures have a marked effect on the quality and shelf life of chocolate products.

Humidity
Storage in damp conditions, as well as moisture given off by high relative humidity fondant centres and trapped in the package, can cause "sugar bloom".

Off-odours/loss of flavour
This can be caused by external influences permeating the packaging material, or emanating from it. Odour transfer from packaging inks and increasing use of reclaimed board for intermediate and outer packaging results in greater risk of taint.

Insect infestation
Chocolate products are very attractive to several varieties of insect. Packaging must have effective seals and be resistant to insects creeping through folds.

Light/oxygen
As light induces rancidity, it can be a problem with products such as white chocolate and chocolate containing poorly coated roast nuts. Similarly, an oxygen barrier may also be needed to avoid or delay degradation. White opaque cavitated films provide an adequate opacity to eliminate "show through".
