The market The bakery market can be broken down by volume, with speciality bakers producing 50%, industrial bakers accounting for a further 35% and the remaining 15% composed of semi-industrial bakery products. Market growth, by value, has been limited over the past few years due to the maturity of many of the larger markets and the conservative attitude of many bakery product manufacturers towards using flexible packaging for crushable food products. Bakery products range from heavyweight breads to delicate French patisseries. A wide range of packaging formats are employed and gas-flushed structures are also used.

Main factors of degradation Impact of humidity: over-drying can cause texture change with a loss of softness; an increase of humidity can encourage mould growth and the development of yeast.
According to the Aw level and the amount of fat, the product needs to be protected against oxidation, loss of odour, and off-odour/taste contamination.
Preservation processes
- Thermal means: infrared, microwave
- Gas flush (the choice of the gas mix depends on the product composition – mainly Aw & fat content)
- Alcohol injection: ethanol is commonly used (either by direct injection or by spray pulverisation before wrapping)
